A dedicated facility
We don't use any wheat or gluten-containing ingredients, and we don't allow gluten-containing products in the shop. There's nothing to cross-contaminate.
No wheat starch
Plenty of gluten-free bakeries use deglutenized wheat starch. It isn't safe for wheat allergies, so we don't use it.

Evan was diagnosed in his early 20s. Dishon exists because he needed a bakery he never had to question.

The grains behind our bread, with tapioca and potato starch for chew and psyllium husk to hold it all together. Every loaf starts with a custom flour blend we mix in-house, built to taste like bread, not like an apology. No gluten-free wheat starch.

Started by someone who needed it to exist.
Evan was diagnosed with Celiac disease in his early 20s and spent years unable to find gluten-free bread that actually tasted like bread. He and his wife Salomé spent three years developing their own recipes before Dishon opened: first at farmers markets, then a commercial kitchen, now a storefront in Manchester.

Yes. It's a dedicated facility. We don't use any wheat or gluten-containing ingredients, and we don't allow gluten-containing products in the shop.
Do I need to order ahead?
No. Walk in any time we're open. Earlier in the day is the safer bet for bagels and bread.
